Lentils are such a great quick and satifying meal, especially if you have vegetarian friends over. I fixed this for lunch today – it tastes a bit like falafel.
1 lb green lentils – cooked till just al dente (NOT mushy)
I large clove garlic, minced/pressed
1/3 to 1/2 C olive oil
3/4 to 1 C lemon juice
2 green onions, chopped
1 C chopped parsley
3/4 C chopped roasted red pepper (only $1 a jar at Dollar Tree)
1/4 C of the liquid from the roasted red pepper jar
salt and fresh ground pepper
2 tsp ground cumin (this is what really makes this dish)
We didn’t have any tomatoes, but I bet they’d be good in it, or sun-dried tomatoes. I served this on a bed of buttercrunch lettuce. I think it would be good with pita and yogurt/tzatziki sauce, too. If you use fresh squeezed lemon juice then you probably don’t need a whole cup.
